A Snack for the Morning After the Night Before

September 2026

So you went on that sixth date, and you decided to end the night together and enter the new day (excuse the pun) in each other's arms. Here's the deal, though: she told you she'd been struggling with her weight and only ever really started feeling good about herself after getting on a carb-conscious diet. You want to be considerate and support her self-care efforts, but at the same time, you can't send your new babe back out into the mean world on a “walk of happiness” (ain't no shame in these streets) on an empty stomach. Well, we've got you covered: here's a delicious low-carb breakfast recipe that will have your new special someone smiling the whole day, with you in mind.

Pumpkin Pancakes

Ready in 60 minutes. Serves 4 (about 2 pancakes per serving, without syrup or honey). 90 calories per serving.

  • ½ cup canned pumpkin
  • ½ cup low-fat vanilla yogurt
  • ¼ teaspoon baking soda
  • 1 large egg yolk
  • ¼ cup cake flour
  • 4 large egg whites
  • ¼ teaspoon salt
  • Cooking spray
  • Maple syrup or honey
A stack of golden pancakes topped with strawberries and banana, drizzled with syrup

Preparation

Step 1: Whisk together the pumpkin, yogurt, baking soda, egg yolk and flour. Whisk the egg whites with the salt, then fold into the pumpkin mixture. Heat a large nonstick skillet coated with cooking spray over medium heat.

Step 2: Spoon in 1/3 cup batter for each pancake. Flip when the tops are covered with bubbles and the edges are slightly brown (about 3 minutes per side). Drizzle with syrup or honey.

… And there you have it!
